Tasty Tuesday - My Favorite Chicken Salad Recipe

One of my favorite summertime dishes is chicken salad.  I have two recipes that I make quite often, but this is my favorite.  These are the ingredients you'll need, along with a secret one that I'll share later:

  • three boiled chicken breasts

  • celery

  • onion

  • seedless grapes

  • pecans

  • seasoned salt

  • pepper

  • mayonnaise or salad dressing (Miracle Whip)

Step 1: Cut up your cooked chicken breasts into very small pieces and put in a large bowl.

I cooked lots of chicken because I'm going to freeze some for a Sunday chicken  dish later.  That's also a great recipe that I'm going to share in a few weeks.




Step 2: Add 1/2 cup of chopped celery and 1/2 cup of chopped onion to the chicken.                 



Step 3:  Next, add 1 cup of sliced, seedless grapes and 1/2 cup of chopped pecans.                                  



Step 4:  Mix all of these ingredients and sprinkle on 3/4 to 1 tsp. of seasoned salt and 1/2 tsp. of black pepper.    Mix well. ( I like to sprinkle  half of the seasoned salt, stir, then sprinkle the rest to make sure it's distributed well.)                                                                                         



See, I told you to use a large bowl.  I had to transfer mine to a larger one!


Step 5:  Oops!  I forgot to take a picture!  Add 1 cup of mayonnaise or Miracle Whip. I prefer Miracle Whip, but I also ate Miracle Whip and white bread sandwiches after school when I was a child, so what do I know?   And, oh yes, another confession....on days when I'm feeling really overweight, I use fat-free Miracle Whip.   :)

Now, for my secret ingredient.................                                                                                                                                              


Hot Sauce!!!!

Step 6:  Add 1 tsp. of hot sauce and mix well.  If you like the taste, add another 1/2 tsp.  Refrigerate and give all the flavors time to mix.  Serve as a salad or make a sandwich.  Enjoy!

My email does not let me send out when I am here in this motel so I thought I would leave a message here. I am working on the RAK's. I don't want you to think that I have forgotten. Life has been so different since Granny left me.

  3. Uh, Yum.... I'm going to try your recipe, too. I love chicken salad, but I've never used hot sauce as a secret ingredient in it. That picture of Lilly is lovely! Precious!
